Ingredients: 1 lb bulk pork sausage 2 c chopped celery (3-4 stalks) 1 onion chopped 6 Tbls butter 3 qt white bread pieces 1 tsp thyme 1 tsp sage 1 tsp crushed rosemary 1/2 tsp salt 1/3 c dried parsley flakes chopped giblets if desired 1 1/4 c chicken broth (approximate)

Directions: |
Directions:Brown pork sausage and remove from pan with slotted spoon. Pour of any fat from the sausage and discard. In the same pan, melt butter and add celery and onion. Cover and cook until soft. Tear bread into one-inch pieces in a large bowl. Add all other ingredients except the broth. Stir in broth a little at a time until it is the consistency that you want. Taste to test seasoning and add more salt if desired. Bake in a casserole at 350º for 30 minutes or cook in a slow cooker on low for about four hours. Can be used to stuff turkey if desired.
Can be prepared in advance and refrigerated. Add some cooking time if it has been refrigerated. |

Notes: Mom did not write down her ingredients for stuffing. She just did it. This is the closest I've come to developing a recipe with measurements that almost matches her creation. I've been using this recipes since our daughters were very young. They did not like eating Thanksgiving dinner anywhere but at home because other people "didn't make the stuffing right". Therefore, I've had lots of practice with this recipe.
