1 large skillet corn bread
4 - 5 boiled eggs
1 pkg. corn bread stuffing mix (Pepperidge Farms)
1 small bunch green onions (chopped)
1 whole chicken or equivalent amount of pieces (boil & debone)
2 - 3 cans chicken broth

Directions:
Directions:
Make cornbread; boil & debone chicken; boil & chop eggs; chop green onions to taste.
Mix all in Dutch oven or cooking/serving pan & fill in with stuffing mix. Put aside some larger pieces of chicken to place on top.
Add chicken broth until really moist...place chicken pieces on top & sprinkle with some green onions.
Cover with aluminum foil & bake about 30 minutes at 350 degrees. Check periodically to make sure not dry. Add broth if needed.

Jiblet Gravy: 2 cans of cream of chicken soup; add small pieces of cooked chicken, some chopped green onions, and chopped egg whites. If desired mix in some chicken broth for desired consistency.
