Directions:Mix in a quart jar: sugar salt, yeast: fill jar with very warm water, set aside in warm place Mix in large bowl: flours and oil When bubbles are plentiful in jar top, add to flour mix. Add oil, mix until well mixed. Set aside in oiled bowl to rise, covered with a towel in a warm place. When it has doubled, punch down well. Let rest. Divide dough, place each into a greased pan. (2 large, or 3 regular) Let rise again until doubled. bake in preheated 350 degree oven 45 minutes, until golden brown and crusty on top. Remove from pans while warm. Coat with butter or margarine to keep top soft for cutting. Eat one loaf warm out of the oven. |

Notes: This was Aunt Gen Haggstrom's recipe. I have used it dozens and dozens of times. I fiddle with the recipe, replacing a small part of flour with oatmeal, adding other healthy items like seeds ....flax, poppy, sesame, sunflower...it is very good toasted or for sandwiches. although it says no knead, it feels so good to knead a little bit that I always do. put it on a counter dusted with flour in a big pile. Fold the top towards you, push it away, turning it 90 degrees every time or two, until it feels bouncy. YOu will have to dust with flour from time to time. when it is time to put in pans, I cut into thirds, form in a ball and roll it up tightly like winding a clock. I place it in pan, tucking end pieces under, and firmly push it down to even it out. this has no preservatives, so unless you devour it or share it, you will need to freeze and refrigerate it.
