1 teaspoon canola oil
1 large onion (chopped)
2 medium garlic cloves (minced)
4 medium carrots (sliced into rounds)
1 pound extra lean ground turkey
2 tablespoons chili powder
1 tablespoon smokey paprika
1 teaspoon ground cumin
1 1/2 - teaspoon red pepper flakes
1 can diced tomatoes (14 1/2 ounces)
1 cup canned tomato sauce
1 cup chicken broth (14 1/2 ounces)
2 tablespoons apple cider vinegar
1 large can dark red kidney beans drained (40 1/2 ounces)
2 medium bell peppers (any combination of green or red)
1/2 teaspoon table salt
1/8 teaspoon black pepper

Directions:
Heat a large pot coated with cooking spray over medium heat. Add oil and onion; sauté onion until soft. Add garlic and carrots and cook until garlic is softened. Add ground turkey and brown meat, about 5 minutes. Stir to break up lumps. Add chili powder, paprika, cumin, red pepper flakes, tomatoes, tomato sauce, broth and vinegar. Bring mixture to a boil and reduce heat. Cover and simmer until meat is tender, 30 to 45 minutes. Add beans and pepper. Simmer uncovered until peppers are done, about 10 minutes. Season to taste.
