1 c. green chilies, roasted, peeled, and chopped
2 eggs, slightly beaten
1 1/4 c. monterey jack cheese, grated
1 1/4 c. sharp cheddar cheese, grated
1/2 c. flour
1 tsp. baking powder
1 1/2 c. milk
1/2 c. sour cream (garnish)
1 avocaodo, peeled, pitted and sliced (garnish)
1 c. salsa

Directions:
Directions:
Preheat oven to 350º

In a large bowl, mix the first 7 ingredients, stirring until well-incorporated
Place the mixture in a 10-inch buttered pie pan
Bake for 50 minutes, or until fully set
Remove from oven and let sit for 5 minutes
Cut into 6 pie-shaped wedges
Garnish each slice with sour cream and avocado slices
Serve salsa on the on the side
