1/2 cup butter, softened
2 hard boiled yolks, pressed through a FINE sieve
1/4 cup sugar
1 cup flour
1/2 tsp. vanilla, lemon or almond extract

Directions:
Directions:
Cream butter with cooked yolk. Beat in sugar and extract. Add flour and mix thoroughly. I would try to refrigerate the dough at this point or place it in the cookie press. The recipe doesn't call for this but it can be difficult to have the cookies keep their shape when working with the soft dough in the press and other similar recipes have called for using a cold cookie sheet so might try that. Can try backing the plunger back a bit to break the dough off when have desired shape. Press cookies onto ungreased cookie sheet and bake at 375º for ten minutes. Do not use lowest rack in oven and use a fairly heavy cookie sheet.

I've tried other cookie press recipes and really think this one tastes the best....very tender. Worth messing with the yolk (I put it in a wire mesh sieve and press through with the back of a spoon).
