1/2 cup warm water (very warm but not hot)
3 pkgs. dry yeast
1 tbsp. sugar
1 cup butter
3 eggs
4-5 tbsp. sugar
pinch salt
4 cups flour, approximate
Filling:
1 1/2 lb. ground walnuts (need ground finely; best if have grinder
1/2-1 cup milk, boiled
2/3 cups sugar
1/2 tsp. cinnamon
1 tsp. vanilla

Directions:
Dough: Mix the warm water with the tbsp. sugar and yeast. Let set 5 minutes until bubbly. Cream butter, eggs, 4-5 tbsp. sugar, salt and then stir in yeast mixture. Begin to add flour. Knead about 5 minutes by hand, then let rest 40 minutes in warm place. Separate into 4-5 balls. Roll out each and spread with nut filling.
Filling: Combine the fine ground nuts with sugar, cinnamon, and vanilla. Slowly add the hot milk. Filling should be moist and thick, not wet so only add enough milk to create a moist filling.
Spread the nut filling over the dough, coming to within 1/2 inch of the edge. Roll up lengthwise, placing seam side down on greased cookie sheet and tucking in ends. Let rise 30 minutes. Leave some room between nut rolls to allow for rising. Cut a few shallow slits in top and brush with beaten egg wash (1 yolk whisked with tbsp. water). Bake at 350º for 30-40 minutes. Cool before slicing.
