1 large chicken, boiled and boned (save broth)
3 tbsp. salad oil
1 chopped onion
1 chopped green pepper
1 can Ro-tel tomatoes
1 tsp. chili powder
1 1/2 tsp. cumin powder
salt and pepper to taste
1 1/2 tsp. oregano
1 can cream of chicken soup
1 can cream of mushroom soup
1 pkg. corn tortillas cut into fourths
1 c. grated cheddar cheese (more if desired)

Directions:
Directions:
Preheat oven to 350º. Boil chicken until tender. Bone and save broth. Simmer onion and bell pepper in oil. Add Ro-tel, chili powder, cumin, oregano, salt and pepper. Add soups and chicken broth. Simmer until mixed.
Cover the bottom of a large baking dish with 1/2 of the chicken, and 1/2 the tortillas,
then pour half the sauce; repeat. Cover with grated cheese. Cover and bake for 25-30 minutes.
