6 potatoes (medium)
3 tbsp. butter or margarine
1 tbsp. grated onion (optional)
1 1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard
1/4 tsp. paprika
3 tbsp. flour
2 c. milk
1 1/2 c. shredded cheddar cheese, divided

Directions:

Wash and boil potatoes until tender. Drain and cool. Peel potatoes and cut into 1 inch chunks; place in a 2 qt. casserole. Melt butter in 2 qt. saucepan. Blend in onion, salt, pepper, mustard, paprika, and flour. Stir over medium heat for 2 minutes; then add milk stirring constantly until sauce thickens and comes to a boil. Stir in 1 cup of cheese until melted. Pour over potato chunks. Top with remaining cheese. Bake uncovered in 350º oven for 30 minutes.
