1 lb. chuck steak, 1.5 “ cubes
1 1/2 C. burgundy
1 lb. sweet Italian sausage cooked whole
2 C. water
6 oz. tomato paste
2 t. salt
1 lb cubed ham
3 chopped onions
¼ C. chopped parsley
1 chopped red pepper
¾ t. pepper
3 minced garlic cloves
1 t. grated lemon rind
2 t. paprika
2 1 lb. cans garbanzo beans
1 sml. cabbage

Directions:

1. Saute chuck steak and sausage ‘til brown. Drain meat, slice sausage, put in Dutch oven.

2. Add burgundy, water, tomato paste, salt, pepper, garlic, paprika. Bring to a boil. Cover. Simmer 1 ½ - 2 hours.

3. Add ham, onions, parsley, pepper, lemon, beans. Cover and cook 20 minutes.

4. Add chopped cabbage. Cover and cook until cabbage is crisp tender, about 15-20 minutes.

5. Refrigerate overnight Skim off fat. Reheat and enjoy with crusty bread and a glass of wine.

6. Enjoy with a glass of Chateauneuf-du-Pape.

This recipe was found in Cooking Light magazine. Ed Asner tried to reproduce a meal he had had while traveling. I don't know if the reproduction is accurate but it is a great recipe.
Serve with crusty bread and a crisp salad.
