2 tbsp flour
1 tsp freshly ground pepper
1 1⁄2 tsp paprika
1 tsp garlic salt
6 boneless, skinless chicken breast halves cut into 9 - 12 pieces


Sauce:
2 T butter
1 T Dijon mustard
1⁄2 C frozen orange juice concentrate
2 T Grand Marnier
1⁄2 C white wine

Bring sauce ingredients to a boil for 2 – 3 minutes.
Thicken with:
2 T flour
2 T orange juice, regular strength
Cook until slightly thickened then pour over chicken.
Bake covered for 40 minutes at 350 F.

1. Mix flour, pepper, garlic salt, and paprika.

2. Cut chicken into 9-19 pieces.

3. Heat oil in large skillet. Dip chicken into flour and place into oil to brown.

4. Make the sauce in a small sauce pan.

5. Thicken the sauce with flour and orange juice.

6. Pour the sauce over the cooked chicken in a casserole pan.

7. Bake covered for 40 minutes at 350 degrees F.

Make batches of double or triple basic recipe according to the number of chicken breasts used. I made this for Tara and Kevin's wedding reception in our backyard for about 80 people. I like it served with rice.
