3/4 c. margarine softened
1 1/2 c. granulated sugar
16 oz. cream cheese
1 1/2 tsps. lemon juice
1/4 tsp. vanilla extract
1 1/2 C. frozen whipped topping
2 prepared 9-inch Oreo cookie crust pie


It can also be made with graham cracker crust. Prepared pie crust is often hard so rather than using a second crust for the top, I crush graham crackers, add light brown sugar and sprinkle on top.

1. In large bowl, beat together margarine and sugar until fluffy and creamy.
2. Beat in cream cheese until smooth.
3. Add lemon juice and vanilla extract until just blended. Do not overmix.
4. Fold in frozen whipped topping with a rubber spatula.
5. Pour filling into one pie shell and gently smooth filling toward center.
6. Crumble second crust into crumbs and sprinkle evenly over filling. Press lightly to form a smooth crumb top.
7. Refrigerate at least 4 hours before serving.
