Crust:
1 stick butter, softened
1, 3-oz. package cream cheese
1 cup flour
Filling:
1 egg, slightly beaten
3/4 cup packed brown sugar
1 tbsp. melted butter
dash salt
1/2 tsp. vanilla
1 tsp. orange concentrate (optional...not in original recipe; I just started adding)
1/2 cup chopped pecans or walnuts

With beater, mix together cream cheese and butter. Mix in flour. Divide dough into about 24 small balls. Press each ball into the bottom and sides of a small muffin pan.
Stir together the filling ingredients and nuts. Spoon into center of each small pastry lined cup, filling about 3/4 of the way as the filling will puff up a bit. Bake at 350º for 15 to 18 minutes. Reduce heat to 250º and bake an additional 10 minutes. Cool before removing. May need to gently loosen sides with a sharp knife, then gently lift out using a fork to help lift or may invert, whichever works best for you.

This makes only about 24...your grandma Garruto gave me a second recipe for larger amounts that was similar although it also added coconut to filling. I think this recipe is a tad better (both are very good). The other recipe was as follows:
crust: 3 sticks butter, 3 cups flour, 8 oz. cream cheese
filling: 3 tbsp. melted butter, 3 eggs, 3 cups chopped nuts, 1 cup coconut, 2 tsp. vanilla, 2 cups packed brown sugar (I added a tbsp. orange juice concentrate). Both recipes are good.
Always make this for Christmas. Try to give them away quickly as this is a recipe I like to bake but also eat!!
