Brined Beer Grilled Chicken Recipe

2 c water
1/4 c kosher salt
1/4 c packed brown sugar
4 cans or bottles (12oz each) Use beer you would drink
2 cut up whole chickens ( 3 to 3 1/2 lbs each)

Barbecue rub
1 tbsp. paprika
1 tsp table salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper
1/4 c vegetable oil

Directions:
1) in 6 - 8 quart noncorosive container or stock pot, mix water, kosher salt and brown sugar, stirring until salt and brown sugar is dissolved. Stir in the beer. Add chicken, Cover refrigerate at least 8 hours, but no longer then 24 hours.

2) Line 15X 10 inch pan & Sides with aluminum foil. Remove chicken from brine, rinse thoroughly under cool running water & pat dry with paper towels. Discard brine. Place chicken in pan refrigerate uncovered 1 hour to dry skin. Meanwhile, in small bowl, mix all rub ingredients except oil. set aside.

3) Start Grill Gas or charcoal for indirect cooking. Brush chicken with oil and sprinkle mixture over chicken.

4) Place chicken on grill over drip pan, cook 5 minutes covered. Turn chicken over & grill addition 20 - 30 minutes longer, turning occasionally until juice of chicken is clear. Check with thermometer 170º for breast, 180º for thighs and drumsticks.
