Ingredients: All measurements are highly subjective. Use the force as a guide.
Garlic (4 cloves) Cilantro (as needed) Korean red pepper flakes (about 1 tbsp.) Thai chilis (5-20 how hot to you want it?) Fish sauce (~2 tbsp.) Olive oil (~ 4 tbsp.) Baby octopus (1 - 2 lbs) Soy sauce (optional)

Directions:1. Mince garlic and add to small bowl. Add chopped Thai chilis. Pour enough fish sauce to almost cover the garlic/chili mixture.
2. Bring pot of water to rolling boil. Drop in cleaned octopus. Cook for no more than 5 minutes. Immediately remove octopus and put in water bath to prevent over cooking.
3. Once cool, cut octopus into bite sized pieces. You may want to clean but the heads in half and give them a rinse for a more appealing presentation.
4. Add octopus to a serving bowl. Add roughly chopped cilantro as needed. Add the garlic/chili/fish sauce mixture. Toss well.
5. Drizzle olive oil over dish as needed. Toss well again.
6. Taste for salt content. If more is needed, use a little more fish sauce or soy sauce. |

Notes: This recipe is just a starting point. Modify as needed with available ingredients. This technique works with large octopus tentacles. Just cut them into bite sized pieces. It also works with squid, large and small.
