1 tbsp. olive oil
1 large yellow onion, finely chopped
3 carrots, sliced round, 1/2" diameter
4 garlic cloves, crushed & minced
1 14.5 oz. tomato sauce
1 1/2 pounds cauliflower, cut into florets
5 small red potatoes, quartered
1 c. vegetable broth, salt & pepper to taste

Heat a large skillet over medium-high heat.
Add olive oil to pan, add onion sauté until translucent.
Add carrots, cauliflower sauté another 4 minutes.
Add tomato sauce, stir, cook 4 minutes.
Add broth, stir well.
Sprinkle with salt and pepper
Cover, cook .5 hour over medium heat or until tender.
