1 tbsp. butter
1 large onion, thinly sliced
1 tbsp. sugar
3/4 c. beer
1 1/2 lbs fresh ground beef
2 gloves of garlic
1/4 c. finely diced red pepper
1/4 c. beer
2 tbsp. Dijon mustered
salt and freshly ground black pepper to taste
2 c. grated cheddar cheese

Directions:
For the beer braised onion
1) Melt the onions in a large heavy skillet
2) Add the onions and cook while stirring frequently over medium heat for 5-6 minute, or until tender.
3) Add 3/4 c beer and the sugar, and cook until beer is absorbed and onions become lightly browned, about 15 minutes.

For the burgers
1) pre heat BBQ on high, and oil grates
2) In a large bowl, gently but thoroughly combine the beef, garlic, red pepper, 1/4 c beer, dijon mustard, salt & pepper
3) Form into 4 patties 1 inch thick, and palce on grill, turning heat down to medium.
4) Grill them for 4-6 minutes per side, or until nearly the desired doneness.
5) Top each burger with 1/2 c grated cheese, and heat till slghtly melted.
