2 lbs. dandelions, rinse clean, cut into 4"sections
8 c. water, boiling
1tbsp. salt

Dressing:
2 lemons, juiced
3/4 c. olive oil
salt to taste

Directions:
Directions:
Boil Water, add salt in a large Pot
add dandelions into water, pressing them down into the water
cook 5 minutes on high, lower heat to medium, remove green immediately cook 10 more minutes
remove from heat immediately to stop cooking process

Dressing:
Mix all ingredients, stir well and pour over the dandelions

*To help your immune system Kathy says: Pour warm dandelion juice into a glass, add lemon juice, stir and drink up.
