1 Tbsp olive oil
1 1/4 lb ground turkey
1 C thick salsa
2 Tbsp flour
2 cans (15 oz each) creamed corn
2 cans (15 oz each) black beans, rinsed and drained
1 Tbsp chili powder
2 tsp cumin
1/2 tsp salt
1/8 tsp pepper

Corn Bread Topping:
1 pouch (6.5 oz) corn muffin mix
1/3 C milk
2 Tbsp butter, melted
1 egg

Directions:
Directions:
Heat oven to 450º.
Spray rectangular 13 x 9 baking dish with cooking spray.
Heat oil in 4 quart Dutch oven over medium high heat
Cook turkey in oil 4-6 minutes, stirring frequently, until no longer pink.
Stir in salsa and flour.
Cook 2-3 minutes, stirring constantly until slightly thickened.
Stir in remaining ingredients except corn bread topping.
Heat to boiling.
Spread turkey mixture in baking dish.
Make corn bread topping.
Pour topping over turkey mixture, gently spread to sides of pan.
Bake 12-15 minutes or until topping is golden brown.
