3 lbs. fresh asparagus, woody ends snapped off
l lb. medium onions, thickly sliced
1 large red onion, sliced
1/4 cup vegetable oil
1 1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
1. Heat oven to 425º. Line two 15 1/2x10 1/2 inch rimmed baking sheets, lined with foil.
2. Gently toss all ingredients in large bowl or plastic bag until vegetables are coated with oil. Spread evenly on baking sheets.
3. Roast 20-25 minutes, stirring once, until vegetables start to crisp and are tender.

I have also roasted carrots and Brussel sprouts using the same method....much tastier than boiling.
