1 can blueberry pie topping
1 1/2 c. fresh blueberries
1/2 t. lemon zest
1 t. fresh lemon juice
1/4 t. nutmeg
1/4 t. cinnamon
2 T. cornstarch mixed with a little water

Directions:
Directions:
In a saucepan put the can of blueberries, the zest, lemon juice, nutmeg, and cinnamon. Heat to a boil and add the cornstarch mixture stirring constantly until it comes back to the dark color. It should be very thick. Remove from the hear and let cool slightly. Wash the fresh berries and fold them into the sauce gently so you do not break them. Make the same blintz recipe as the cheese blintzes. Fill the same way using the blueberry sauce. Place in buttered 9x11" pan and brush with the egg wash or just fry them in butter and sprinkle powdered sugar over them and enjoy.
