1/2 c. unsalted butter, melted
1 cup sugar
3 Tbsp lemon extract
2 large eggs
1 1/2 c sifted flour
1 tsp. baking powder
1 tsp.salt
1/2 cup milk
2 Tbsp. grated lemon rind

Icing
1/4 c. lemon juice
1/2 c. sugar

Directions:
Directions:
Heat oven to 350. Grease and flour 9x5x3 loaf pan.
Mix butter, sugar and lemon extract. Beat in eggs with mixer.
Sift flour baking powder and salt in another bowl. Add this mix to butter, alternating with milk beating just enough to blend. Fold in lemon rind and pour into pan.
Bake at 350 for 1 hour, cool 10 min. remove from pan.
While bread is still hoy, mix topping and pour overtop.
When loaf is cool, wrap tightly in foil and store overnite before serving.
