"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 Loaf of Soft Store bought Bread
5 Boxes of stove Top Stuffing
6 Eggs
Milk (enough to cover bread in bowl)
3-4 quarts of Chicken Broth
1 large onion or 2 small onions
1 Tbsp. Pepper
1/2 bunch of finely chopped celery
4 lbs. lean ground chuck
2 lbs.bulk pork sausage

Directions:
Directions:
You need very large mixing bowls and a large oven roaster pan or Nesco oven roaster for baking in oven.

Break up bread in bowl and cover with milk so it gets soft, then add eggs and mix together.
Add in the 5 boxes of Stove Top stuffing mix
Cook onion, celery and chicken broth on stove top until warmed together. Cool and pour over the bread and stuffing mixture.

Add meat and pepper and mix all ingredients together in one of the bowls. Usually using your hands inside glad sandwich bags is easiest and most sterile and allows you to mix all ingredients well.

Cook a little to taste in the microwave. Then, adjust the seasonings to your taste. Pour all into either the large nesco liner to bake in the oven or a large roaster pan.

Bake in regular oven at 350º for 1 hour and 15 minutes uncovered. Stir at least once during cooking so it bakes all the way through, then bake until it is cooked through and lightly browned at edges.

Personal Notes:
This is one of the Derenne Family favorites and my family favorite. Mom used to make it occasionally on a Sunday, but it was always prepared for Easter, Thanksgiving, and Christmas! Cathy helps carry on the family Holiday Dressing tradition, especially at Christmas time. Now, you can all give it a try and see if your recipe tastes like Grandma Rose's recipe! Enjoy and if you refrigerate the leftovers, they are terrific warmed up!
