4 slices Bacon (diced)
2 Lbs. Italian Sausage
Tbs. & Ts. Emeril's Essence (see Note for Recipe)
2 cups Onion (chopped)
1/2 Ts. Red Pepper Flakes
2 Tbs. Garlic (minced)
2 Bay Leaves
8 cups Tomatoes ( 2 28oz. Tomatoes plus 8 oz. Tomatoes) I use Cento Tomatoes
6 cups Chicken Stock
Salt & Pepper to taste
1/2 cup Cilantro
Crusty Bread

Directions:
Cook Bacon, Add Sausage & cook till done. Add Onions & Essence, cook till Onions are soft. Add Red Pepper Flakes, Garlic, Bay Leaves, Tomatoes & Stock. Boil & Reduce, simmer 30 minutes. Add Salt & Pepper to taste. Add Cilantro. REMOVE Bay Leaves. Serve with Crusty Bread.

You make make this a half pot, yep....cut everything in half!

1 Tbs. Cayenne Pepper
1 Tbs. Oregano
1 Tbs. Thyme
