4 - 5 lbs. leg of lamb boneless (remove netting)
6 Rosemary sprigs
1/4 cup olive oil
5 cloves garlic, peeled
11/2 tsp. salt
3/4 tsp. pepper

Directions:
Directions:
Preheat oven to 375º
Remove netting from lamb, sprinkle salt and pepper all over the meat.
Place 2 sprigs Rosemary inside meat.
Place 4 sprigs of Rosemary on bottom of baking pan.
Place opened side of leg on bottom of pan, so closed end is upright,
Pierce leg to make a hole large enough to insert 5 garlic cloves.
Drizzle olive oil all over the leg of lamb.
Roast for 1.25 hours, checking after 1 hour for doneness
