2 packages of dry yeast
1/2 cup very warm water
1/4 teaspoon ginger
1 1/4 cups boiling water
1 cup quick oatmeal
1/2 cup light molasses
1/3 cup butter
1 tablespoon salt
2 eggs
5-6 cups white flour
2 cups whole wheat flour
1 beaten egg white
1 tablespoon water
1/2 cup quick oats

Directions:
Directions:
1. Dissolve the yeast and ginger in the 1/2 cup warm water
2. In large bowl combine the boiling water, oatmeal, molasses, butter and salt
3. Blend in 1 cup white flour and add eggs
4. Blend with mixer
5. Add yeast mixture to flour mixture
6. Add whole wheat flour and mix on medium speed for 1 minute
7. Add remaining flour, 1/2 cup at a time until forms a ball that is not sticky
8. Knead for 5 minutes and then let it rise until doubled in size
9. Knead again and let it rest for 10 minutes.
10. Form into 2 loaves, put in loaf pans and let it rise again until double in size
11. Brush top of loaves with egg whites
12. Sprinkle with remaining oats
13. Bake at 350º for 20 to 25 minutes
