2 egg yolks
1 whole egg
1/2 c. granulated sugar
1/4 tsp. salt
1/4 to 3/4 c. lemon juice
2 egg whites
1 c. whipping cream (or 2/3 c. chilled evaporated)
16 graham crackers
1/4 c. butter, melted

Directions:
Directions:
1. Beat yolks and whole egg together.
2. Stir in sugar, lemon juice, and salt.
3. Cook in double boiler until thick (custard).
4. Whip egg whites stiff and add cool whipped cream.
5. Combine eggs whites and whipped cream.
6. Then fold into cooled lemon custard.
7. Roll graham crackers fine and add to melted butter.
8. Put half of crumbs in freezing tray.
9. Add custard, then top with rest of graham crumbs.
10. Keep in fridge until ready to serve.
