2 T. butter, softened
salt, dash
1/2 c. + 2 1/2 c. icing sugar, sifted
1 egg
1 T. lemon juice
1 tsp. lemon rind, grated (optional)

Directions:
Directions:
1. Cream butter, salt, and 1/2 c. of icing sugar. blend well.
2. Add egg and lemon juice.
3. Gradually blend in rest of sugar. Beat until creamy.
4. Add grated lemon rind, if desired.
