Cake:
3 c. all purpose flour
2 tsp. baking powder
1/8 tsp. salt
1 c. butter or margarine
2 c. sugar
3 eggs
1 tsp. vanilla
1/2 c. orange juice
1/2 c. water

Filling:
1 c. brown sugar, packed
1/2 c. water
1 c. cranberries, fresh or frozen, thawed
1 c. chopped apples (1 apple?)
1/2 tsp. grated orange peel
1/8 tsp. cinnamon (+)
nutmeg, dash

Glaze:
1 c. confectioner’s sugar
1 T. + 1/12 tsp. water

Filling:
1. In medium saucepan, combine brown sugar and water.
2. Cook and stir over medium heat until sugar is dissolved.
3. Add cranberries, apple, orange peel, cinnamon and nutmeg.
4. Bring to boil then reduce heat and simmer, stirring occasionally for about 1 hour or until very thick.
5. Cool to room temperature.
6. Grease and flour 10” fluted tube pan and set aside.

Cake:
1. In small bowl, combine flour, baking powder and salt, and set aside.
2. In large bowl, beat butter and sugar together using electric mixer, until light and fluffy.
3. Beat in eggs and vanilla until smooth.
4. Alternately beat in flour mixture and orange juice and water, beginning and ending with flour mix to create the batter.
5. Stir 2 T. of batter into cranberry mixture (filling).
6. Pour remaining batter into greased pan.
7. Spoon cranberry mixture over top to form a ring without letting mixture touch sides of pan.
8. Bake at 350º F for 1 hour or until knife or toothpick comes out clean.
9. Cool in pan for 10 minutes.
10. Remove and cool completely on wire rack.
11. Prepare glaze and drizzle with spoon over the top and sides of cake.
