3 eggs
1 cup sugar
2/3 cup pumpkin
¾ cup flour
1 teaspoon baking powder
½ teaspoon cinnamon (to taste)

Filling:
8 oz cream cheese
4 tablespoons butter
½ teaspoon vanilla
1 cup powdered sugar
Cinnamon to taste (optional)

Roll:
Beat eggs 5 minutes, add sugar. Stir in remaining ingredients.
Line jelly roll pan with wax paper (parchment paper works a little better) and spray with non-stick cooking spray.
Bake at 375 for 15-20 minutes
Turn on to powdered sugar towel. Sprinkle powdered sugar on to pumpkin roll.
Roll up and cool 20-30 minutes.

Filling:
Beat until smooth.

Unroll, spread filling evenly all the way to each edge, reroll. Refrigerate at least 20 minutes.
