3#'s onion, peeled cut in 1/2 from top to bottom
1/2 cup butter
6 cubes beef bouillon
1 cup boiling water
1 cup dry white wine
2 quarts water
4 oz Swiss or Gruyere cheese, well chilled
2 tsp Worcestire sauce
dash white pepper, 2 tsp salt
1/2 loaf French bread

Directions:
Directions:
Slice onions. Cook onions in butter over medium low heat until lightly browned (about 20 minutes) Dissolve bouillon in boiling water. Add bouillon, water and wine to onions.
Cover, let simmer for 2 hours, stirring occasionally.Near the end of cooking time add worcestire, salt & pepper to soup.
Shred cheese onto wax paper.
To serve: Turn on broiler
Place a thin slice of French bread in bottom of individual ovenware bowls. Ladle soup into bowls and top with a thick layer of shredded cheese. Put under broiler until cheese melts. Serve at once. Enjoy!
