2 cups sifted flour
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 cup walnuts
1 cup raisins
1/2 cup shortening
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 cups applesauce

Directions:
Directions:
Sift together flour, baking powder, soda, salt and spices. Add nuts and raisins. Cream shortening and sugars until light and fluffy. Add egg and beat thoroughly. Add flour mixture and applesauce alternating. Pour into a 9x13 inch pan. Bake at 350º for 35-40 minutes.

Quick Maple Icing:
Combine 1 cup brown sugar and 2 egg whites and beat well. Add 1/4 cup boiling water and 1/4 teaspoon maple flavoring and beat until light and fluffy. Spread over cooled cake. Top with chopped walnuts.
