2 cups flour
2 tsp baking powder
1 1/2 tsp soda
2 tsp cinnamon
2 cups sugar
1 1/2 cups oil
1 tsp salt
4 eggs
2 cups grated carrots
18 3/4 can crushed pineapple drained
1/2 cup chopped nuts

Cream Cheese Frosting

1/2 cup butter or margarine
18 oz pkg cream cheese, softened
1 tsp vanilla
1 lb confectioners sugar, sifted

Cake

Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs and mix well. Stir in carrots, pineapple and nuts. Turn into three greased and floured 9 in layer cake pan. Bake at 350 degrees 35 to 40 mins. Cool a few minutes in pans then turn out and cool on wire racks. Fill layers and spread top and sides with frosting.

Cream Cheese Frosting

Combine butter, cream cheese and vanilla and beat well. Add sugar gradually, beating well. If too thick, add a small amount of milk to thin to spreading consistency.
