1-1/2 cups water
3/4 cup bulgur wheat
1 medium tomato, cut into 1/2 inch cubes - or use cherry tomatoes
1 med, cucumber, peeled, seeded and cut into 1/2 inch cubes
2 T. Chopped fresh mint
2 T. Olive oil
1 T. Lemon juice
Salt & pepper to taste

Directions:
Bring water and bulgur to boil in medium saucepan, reduce heat to low, cover and simmer until bulgur us cooked and water us absorbed, about 12 minutes. Remove from heat.

Spread bulgur onto a large place and place in refrigerator to cool. Place in a mixing bowl and fluff with fork. Add tomatoes, cucumber, mint, oil, lemon juice; stir together and season with salt and pepper. Serve at room temperature.
