3/4 cup fresh or 2 6-1/2 oz. can clams
1 cup onion chopped fine
1 cup celery chopped well
2 cups small diced potatoes
3/4 cup flour
3/4 cup butter - only butter
*1 quart half & half
1 1/2 tsp. salt
1/2 tsp. sugar
1 tsp red wine vinegar, or to taste
few grains of pepper

Drain clams and pour liquid over vegetables in saucepan. Add water to barely cover. Simmer over medium heat until tender. Melt butter. Add flour, cook a minute or two. Add cream and cook, stirring constantly until smooth and thick (do not boil). Combine with vegetables (I drain them, but keep the liquid until you know if you want to use it to thin the chowder). Stir in sugar, vinegar, and pepper.
