Ingredients:

1 tbsp. olive oil
2 onions chopped
2 cloves garlic crushed
1 tbsp. fresh thyme leaves
2 tsp. grated lemon rind
4 ripe tomatoes
2 1/2 c. white rice
Pinch Saffron soaked in 2c. water
4c. chicken or fish stalk
2 c. frozen or fresh peas
2 red pepper chopped
2 lb. mussels scrubbed
1 lb. firm fish fillets
1 lb. prawns
8oz. scallops
1 tbsp. parsley

Directions:
Directions:
Saute first 4 ingredients then add tomatoes and cook stiring for 4 min.
Add rice and cook stirring for 4 min.
Stir in Saffron and stock and bring to a boil- simmer for 30 min.- until rice is done
Stir in peas ,red pepper ,and mussels and cook for 2 min.
Add remaining seafood and cook for 2 min. then add parsley and cook for another 1-2 min
