Pizza Dough and Sauce Recipe

3/4 tsp. dry yeast
3/4 c. + 2 T. warm water
olive oil
sugar, pinch
3 c. flour

Sauce:
2 T. olive oil
2-3 cloves fresh garlic, minced
1-2 onions, minced
2 T. oregano
pinch of thyme
pinch of rosemary
pinch of basil
12 oz. can tomato sauce
12 oz. water

Directions:

Dough:

1. Pour dry yeast in to small amount of warm water.
2. Add very small pinch of sugar to get yeast working.
3. Let this set until it is working.
4. Add yeast mixture to balance of water.
5. Add flour a bit at a time. Then knead.
6. Coat a bowl with oil, ball the dough and put it into bowl and put in a warm place for 1 1/2 to 2 hours until it rises.
7. When ready, divide dough into 2 parts.
8. Pull dough in to pizza pans either by hand or by rolling and shape it to pan.
9. Bake at 400-425º F for 20-30 minutes.
10. Brush with olive oil before adding sauce, toppings.

Sauce:

1. This can be made a couple of days ahead of time.
2. In heavy pan, heat oil and sauté garlic and onions until clear, almost brown.
3. Add oregano, thyme, rosemary, basil.
4. Add tomato sauce and water and stir well.
5. Simmer on low until proper consistency is reached.
