4 tbsp. flour
1/3 cup bacon fat
3 cups cooked green beans, reserving liquid or ham stock
2 cups cubed potatoes, peeled, cooked, drained
1 cup cubed ham or several pieces cooked bacon
pepper to taste
DO NOT ADD SALT

Directions:
Melt the bacon fat in a skillet. Stir in the flour and stir constantly over medium heat until flour browns to a warm bown (it will get quite thick). Be careful as this can burn quickly at this point so don't overcook beyond a warm brown color. Slowly stir in liquid from cooking green beans (or ham stock) to make a thin gravy consistency. Add the cooked beans, potato, and ham or bacon pieces. Simmer a few minutes, then serve. Should have enough gravy to have to serve in a soup bowl.

This is another recipe from my grandmother but Mother used to make it also. Since the bacon and ham if you use it has a lot of salt, you don't want to add additional. Mother pronounced this dish "Boinganese" but wondering if it could be a recipe for a bacon gravy Bolognese. Not sure of ethnicity but great on a cold day.
