11/2 cups water
2 tsp. Old Bay Seasoning, divided
3/4 pound medium shrimp, peeled and deveined
2 T finely chopped green onion
2 T finely chopped red bell pepper
1 T chipped fresh parsley
2 tsp. water
1 tsp. olive oil
1 egg white
1 loaf baguette-style French bread

Directions:

In a saucepan, combine 11/2 cups water and 1/2 tsp, Old Bay Seasoning.
Bring water to a boil, Add shrimp and cook 3-5 minutes or until shrimp turns pink.
Drain well and cool.

Finely chop shrimp. In med. bowl, mix shrimp and remaining Old Bay with next 6 ingredients.

Cut bread diagonally into 1/2 inch slices and lightly toast. Spread bread lightly with mayo.

Spoon shrimp mix evenly over bread slices.

Place on baking sheet, coated with cooking spray. Bake at 350º for 8 to 10 minutes until lightly browned.
