2 c. milk
1/2 tsp. salt
1/2 tsp. dry mustard
1 bay leaf
1/4 tsp. thyme
2 lbs. fresh or frozen cod fillets (or haddock, halibut)
2 c. dry fine bread crumbs
1/3 to 1/2 c. butter, melted
1 juice of lemon

Directions:

1. Mix milk, salt, mustard, bay leaf and thyme in a bowl.
2. Cut fish in to individual portions, place in milk and stir until fish is well coated.
3. Cover and marinate for 2-3 hours in the refrigerator.
4. Grease 1 1/2 quart casserole or baking dish.
5. Place bread crumbs on large plate.
6. Mix butter and fresh lemon juice together in bowl.
7. Roll pieces of fish in bread crumbs and set side by side in baking dish.
8. Pour the butter-lemon mixture over the fish.
9. Then carefully pour the marinade mixture around the pieces, but not ON them.
10. Cook at 400ºF for 30 minutes for fresh fillets or 40 minutes for frozen fillets.
11. Top should be crusty.
