6 Med. Cucumbers, Chopped (8 Cups)
2 Cups Onions, Coarsely Chopped
4 Med. Sweet Red Peppers, Chopped
1 Med. Head Cauliflower, broken in florets (Could add Carrots)
4 Cups Small Pickling Onions
1 Cup Coarse Salt
------------------------------------- Cover with water
4 Cups White Vinegar (Or more)
4 Cups Sugar (or less)
3/4 Cup Flour
1/4 Cup Dry Mustard
1 TBSP Turmeric
1 1/2 TBSP Celery Salt. (Can add 1/4 tsp Ginger P. & pinch Cayenne P.)

Directions:

Layer the Vegetables - the cucumber, onion, red pepper, adn caulflower in a bowl with the salt. Cover with Cold Water and let stand overnight or about 12 hours. Drain and rinse well with cold water.

In a saucepan, combine sugar and vinegar. Heat to boiling. Mix the remaining ingredients, the flour and seasoning. Add some of the boiling vinegar mixture, cooled, and mix well. Add drained vegetables to this sauce. Cook 15-30 minutes. Pack in hot sterilized jars and seal at once.

I have made this a couple of times. I found it to be a bit bitter but I love this pickle so will cut back maybe on the vinegar... I will try to cut the bitterness next time.
