2/3 c. butter
3 eggs
2 1/4 c. sifted all purpose flour
1 tsp. soda
1 c. water
1 c. sauerkraut, well rinsed, drained and cut fine
1 1/2 c. sugar
1 tsp. vanilla
1 tsp. baking powder
1/4 tsp. salt
1/4 c. cocoa
1/2 c. nuts, chopped
cream cheese (for icing)

Directions:
Directions:
1. Cream butter and sugar until fluffy.
2. Beat in eggs one at a time.
3. Add vanilla.
4. Sift dry ingredients together and add to creamed mixture with the water, alternating.
5. Add sauerkraut and mix well.
6. Pour in to two 9” pans or one long pan.
7. Bake at 350º F for 30 minutes or until centre springs back.
8. Use cream cheese icing.
