2 c. sugar
2 c. carrots, grated
3 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
4 eggs
1 c. nuts, chopped

optional: 1 or 2 grated apples (add additional egg if using apples), 1 extra tsp. cinnamon

1. Beat eggs and add sugar, oil and carrots (apples) and all dry ingredients.
2. Bake in angel food cake pan.
3. Frost with powdered sugar.
