1 lb. ground beef, medium or lean
2 T. oil or shortening
1 c. onion, chopped
1/4 tsp. garlic salt or powder or 1 clove chopped
1 1/2 tsp. salt
2 tsp. sugar
4 T. chili powder
1 T. cumin seed or powder
1/2 T. oregano
2 T. tomato paste (overflow)
3 T. flour
3 1/2 c. water
1 can red kidney beans

Directions:
Directions:
1. Heat oil in heavy iron skillet.
2. Sautee onions and garlic, add beef and cook through, stir frequently.
3. Add salt, sugar, chili powder, cumin, oregano and stir.
4. Add tomato paste and stir.
5. Add flour slowly, stir until even, no lumps.
6. Turn mix in to large pot and add water, stir until even.
7. Cover and cook slowly for 2 hours.
8. Add beans (and liquid).
9. Heat and serve.
10. Make day before to improve flavour.

I still use this recipe today, but add mushrooms, carrots, celery, red or yellow peppers, and sometimes chickpeas. - Vicki.
