1 lb. Yellow Eye dry beans or navy or great northern
water
1 onion, chopped
3 celery stalks, chopped
2 sweet potatoes, diced
1 1/2 tsp. salt
1 Tbsp. basil
1 tsp. granulated garlic
1 tsp. coriander
1/4 tsp. fenugreek
1/4 tsp. celery seed
1-28 oz. can diced tomatoes

Directions:
Directions:
Wash beans and soak in water over night. Drain off water. Cover with fresh water in a pot, and bring to a boil. Turn off heat. Let sit a few minutes. Then drain off water and add 3 quarts fresh water. Resume cooking. Once beans are at a simmer add all ingredients except the tomatoes. When all veggies and beans are soft add the tomatoes.
