Lemon Meringue Pie Recipe

1 baked 9 inch pie crust
1/3 C Cornstarch
1 C Sugar
1/8 tsp Salt
1 1/2 C Warm Water
Grated Peel of 1 Lemon
1/2 C Lemon Juice
4 eggs - separated
1 Tbsp Butter

Directions:
Directions:
OVEN 400 10 min
Stir in a saucepan, cornstarch, sugar and salt
Stir in water, lemon peel and lemon juice over med. heat until boils
Remove from heat
In a small bowl whisk egg yolks, then stir in a small amount of hot sauce
Slowly pour egg mixture into sauce. Stir rapidly to prevent lumps
Return to heat: cook, stirring, until mixture is thick (do not boil)
Add butter to mixture and stir until melted and thoroughly blended
Pour mixture into pie crust
Top with meringue
Beat 4 egg whites and 1/4 tsp salt until soft peaks form ( use high speed mixer)
Add 1/2 C Sugar. 2 Tbsp at a time, to egg white . Beating at high speed
Whites should stand in stiff, glossy peaks
Spread meringue over pie filling
Bake until golden---10 min cool
