2 1/2 c Italian rice
2 T butter
2 T olive oil
5 cups Swanson's chicken broth
1 1/3 C heavy cream
6 oz Gorgonzola cheese, diced
1/2 stick butter
1/2 cup Parmesan cheese, freshly grated

Directions:
Directions:
Saute rice in butter and olive oil, over moderately high heat, until golden. Add chicken broth, reduce heat to low, and simmer until liquid is absorbed. In a double boiler, combine cream and cheese and heat mixture over a low heat until cheese is melted. Pour the sauce over the rice and simmer until rice is tender. Remove pan from heat, and toss with 1/2 stick butter and 1/2 cup freshly grated Parmesan cheese
