1 lb pizza dough (or puff pastry sheets)
Cooking spray
1/2 lb. Mild Italian sausage (turkey or pork)
1 T. Oil from sun-dried tomatoes
Jar of Sun-dried tomatoes packed in olive oil
6 slices Provolone cheese ( or more if using rectangle pan)
2 cups cherry tomatoes, halved
Chopped fresh basil and/ or crushed red pepper (optional)

Directions:
1. Preheat oven to 450º.
2. While oven preheats, shape dough into round pizza pan or rectangular pan coated with cooking spray. Pricking dough to eliminate bubbles. Bake dough 10 minutes, checking and pricking dough more if bubbles appesr. Dough should look almost done.
3. While dough cooks, saute sausage, breaking into small pieces. Drain.
4. Remove crust from oven; rub with oil from sun-dried tomatoes. Sprinkle with sun-dried tomatoes, use amount you prefer. Top with cheese, then sausage and halved cherry tomatoes. Bake at 450º for 8 minutes or until crust is browned and cheese is melted. Sprinkle with basil or crushed red pepper if desired.
