1 c. converted long grain rice
3 c. cups chicken broth
1⁄4 tsp. salt
2 lbs. fresh spinach leaves, chopped into strips
1⁄2yellow onion
1 garlic clove, finely minced
1 leek coarsely chopped (white part only)
3 tbsp. olive oil
1/2 tsp. salt
1/8 c. mint leaves
2 lemons, juiced

In a large heavy pot, heat olive oil over medium heat, sauté onion until clear
Over low heat add rice, garlic, salt & pepper, stir well

Add broth
Gradually add the spinach and mint, constantly pushing the spinach down into the broth to bring the mound down.
Cover and simmer 20 minutes, stir occasionally, until rice is cooked
