1-2/3 cups all purpose flour (can use a mix of white and whole wheat)
3/4 tsp baking powder
1/2 tsp grated whole nutmeg
1/4 tsp baking soda
1/4 tsp ground mace
3/4 cup sugar
2 tsp vanilla extract
2 large eggs
3/4 cup dry roasted cashews
3/4 cup golden raisins

Directions:
Directions:
1. Preheat oven to 300º.
2. Lightly spoon flour into measuring cups, level with a knife. Combine flour and next 4 ingredients.
3. In another bowl mix sugar, vanilla, and eggs until thick (can use mixer).
4. Stir flour mixture into sugar mixture, add cashews and raisins.
5. Turn dough out on lightly floured surface and knead lightly 7 or 8 times.
6. Shape dough into 12-inch roll. Place roll onto baking sheet sprayed with cooking spray, and pat to 1-inch thickness.
7. Bake at 300º for 45 minutes. Cool 10 minutes on a wire rack.
8. Cut roll diagonally into 24 (1-/2 inch) slices, stand slices upright on baking sheet.
9. Bake for additional 20 minutes. Remove from baking sheet and cool.
